Simple Veg Noodles

Noodles... One of the best dish from Asia, and also my favorite food from my childhood.

Still I remember the college days when we friends jumped over the hostel back side wall to have the delicious noodles outside.When we were in first year of college, Friday's dinner used to be horrible at our hostel (only on Fridays:) )We first year students don't have the  permission to go out of hostel after 5pm. There was a private fast food center at our campus which will operate after the college hours. We girls used to lend the burka's from our friends, and cover our self to visit the fast food at the night times. so people will not be knowing which year students we are.. :) Some times in the other weekdays also we used to lend the Burka's. That mad about the noodles :)

Ok.. Let us get in to the cooking now. There are several ways of making delicious noodles.

Here i have shown a simple and delicious Veg noodles preparation. 


The quantity i have taken here will serve 3 to 4

Uncooked noodles : 2 cups(measured with 8oz cup)

Onion - 1 medium size
green chili - 2
ginger garlic paste -1 tea spoon
carrot - 1 small (about 50 grams)
beans - about 50 grams
green peas - a handful

pepper powder - 1 tea spoon
salt - as per taste
Oil - 4 tea spoons


1. Take 4 cups of water in a pot and bring to boil. when the water bubbles add the uncooked noodles to it.
2. cook for about 7 to 8 mins or until the noodles is tender.
(If your noodles pack says specific way of cooking, please follow those.)
3.Once the noodle is cooked, drain the water and wash it twice with the cold water (Preferably running water. if you dont have drainer or drinking water tap, you can still add cold water in pan and drain it.)
4. Keep the drained noodles aside.



1. In a pan, pre heat 2 spoons of oil and add green chilies and onions to it and saute for 2 to 3 mins.
2. Once when the onions are turning into golden brown, add the ginger garlic paste to it.
3. Fry until the raw smell of ginger garlic paste goes.
4. Then add cut vegetables to it. (If you prefer to add capsicums do not add at this stage. it can be added when  veg are half cooked. ).
5. Add little salt to it, mix well , keep the flame on simmer and close the pan with a lid.
Let it cook for 10 mins
6. In between open the lid and turn the veg, so all the sides of the veg will be cooked even. Add oil to veg if required.



7. Check whether the veg are cooked,( if not let it cook for few more mins)
8. Then add the cooked noodles to the veg and saute it for 2 mins
9. When the noodles is mixed well with the veg, add salt and pepper as per your taste.
10. Before you switch off the flame you can add few drops of soy sauce. (But i dint use today)



Serve hot with tomato ketchup / sauce.


Notes: 
1.Veg cooking time depends on how thick or thin you cut it.
2.I do not use sauce in the noodles preparation, if you like the sticky texture, then you can add a spoon of tomato sauce and few drops of soy sauce.
3. I have used flat noodles.
